Raspberry Pumpkin Pupcakes [RECIPE]
Who says dogs can't have cupcakes? These fruity "pupcakes" are a fun twist on traditional dog treats. Packed with digestion-friendly and disease-fighting ingredients, they'll give your pup a powerful nutrient boost while satisfying their sweet tooth. Let's get cookin'!
Raspberry Pumpkin Pupcakes (V, GF)
INGREDIENTS
Yields 6 pupcakes
Pupcakes:
- 1 cup ground gluten-free oat flour
- 1 tsp baking powder
- ¼ cup melted coconut oil
- ¼ cup plain canned pumpkin*
- ¼ cup unsweetened apple sauce
- ¼ cup frozen raspberries
Frosting:
- ¼ cup plain canned pumpkin*
- 1 Tbsp almond or oat milk
- 1 Tbsp ground gluten-free oat flour
- 1/8 tsp ground cinnamon
*Note: Be sure to use plain puréed pumpkin, not pumpkin pie mix.
METHOD
- Preheat oven to 350° F and grease a muffin tin with coconut oil.
- Add all of the pupcake ingredients except the raspberries to a food processor and blend until smooth.
- Gently fold in the frozen raspberries, stirring 1-2 times.
- Pour the batter into 6 muffin tins and bake for 20-25 minutes or until golden brown and the center is set.
- While the pupcakes are baking, add all of the frosting ingredients to a mixing bowl and stir.
- Transfer the frosting to a ziplock-style bag and cut a small hole in one corner. Place in the fridge.
- Once the pupcakes have baked and cooled, use the piped frosting to frost each one.
If you have leftovers, store them in a sealed container for 2-3 days, or freeze the pupcakes and frosting separately for later use. Enjoy!
